Fideo Caldoso. Soupy Fideo!

Fideo caldoso or soupy Mexican style vermicelli pasta was a childhood favorite for many of us and still is! Why are we filled with nostalgia at the mention of sopa de fideo, sopita? I can only speak from my own experience, but I experience feelings of happiness and love. Food memories evoke a strong emotion in me. They make me sad sometimes, for times gone by, but also inspire me. Food in general is our common ground that we all share. Universal!

If You Had To Give Up Fideo Or Beans, Which Would You Choose?

Notice I didn’t include corn tortillas in there, right? Lol! It would be hard for me to choose because I love both, but if you made me choose, I could not give up fideo! That’s why I always say we should enjoy food, but in moderation. I know I show my followers a lot of food and there is cooking going on al the time in my kitchen. Leftovers and sharing dishes is how I manage all the food I cook. Sometimes I will freeze some of it too. Plus leftovers are wonderful when you need a quick meal the next day or two.

What Is Your First Memory Of Enjoying Fideo?

I’m positive that mom fed all eight of us plenty of sopita, fideo and rice as soon as we could have solid foods. We also enjoyed lots of easy dishes with eggs and beans. Mom’s cooking was simple and those simple dishes are the ones I crave all of the time. My most vivid memory of fideo is coming home from school when I was about five or six years old. Walking in the door and the first thing that hits is the aroma of toasting, frying pasta. Then comes the sounds, spoon stirring the pasta that sounds like it’s scraping the bottom of the pot. I’m instantly hungry at that point!

A Simple Fideo Is Just The Beginning!

I mention often that I am a curious cook. And as much as I love the simple traditional foods, I also love experimenting with different combinations and variations of recipes. I enjoy adding vegetables to my fideo. There are recipes for fideo with shrimp, fideo with beef and fideo with chicken. I enjoy them all! What dishes have you prepared with fideo?

I always add the oil and pasta both cold, then it warm up slowly.

Some people believe that the frying of the pasta will prevent it from absorbing the broth once it’s done. Hasn’t worked for me.
Sauté with onions
If you don’t prefer the diced onion in the fideo, you could just saute a few bigger pieces and then remove them before serving. That’s what mom would do.

If you have to choose, choose blending fresh tomatoes over canned sauce. The fresh will taste more homestyle. But, then again, it’s ok to use can if that’s what you have on hand.

I will always opt for homemade chicken broth if possible, but I am realistic. I do keep bouillon and chicken base in my pantry all of the time.

Do You Have A Favorite Garnish For Fideo??

I like a little squeeze of fresh lime and a couple of dashes of a Mexican hot sauce. Warm corn tortillas are a must!

What is it about fideo, Mexican style soupy bowl of pasta that we love so much? For me, it brings back memories of mom and dad cooking, sharing meals together and feeling loved. Una sopita de fideo!

Equipment

  • 2 large pots
  • Blender

Ingredients

  • 2 tbsps oil
  • 7 oz fideo pasta
  • 6 cups water
  • 2 tbsps tomato chicken bouillon
  • 1/2 c onion
  • 3 Roma tomatoes
  • 1 serrano peppers
  • 2 cloves of garlic
  • 1/3 tsp Cumin
  • 1/3 tsp Pepper
  • Salt, to taste
  • Small handful fresh cilantro

Instructions

  • In a large pot, add the oil and the fideo pasta. Turn up to medium heat.
  • In another pot, at medium heat, add the 6 cups of water with 2 tablespoons of tomato chicken bouillon.
  • When the fideo begins to sizzle, you want to start stirring often. If the fideo is toasting too fast, reduce the heat slightly. Continue frying, toasting and stirring for 3-5 minutes.
  • To the blender jar, add the tomatoes, serrano and garlic. Ladle in 2 cups of the broth that is warming. Cover, holding lid down with a kitchen towel and blend on high until smooth. Set aside.
  • Add the onions to the toasted fideo and saute for 2-3 minutes. Pour in the blended tomato to the pot. Pour in the 4 cups of remaining broth. Stir well to combine. Taste for salt. Mix in the cumin and black pepper. Add the fresh cilantro. Cover pot, reduce heat to medium low. After 10-12 minutes check to see if pasta is tender.
  • If ready, remove the cilantro and ladle fideo into bowls. The longer it sits, it will absorb some of the broth. If you like it extra soupy, you could have two extra cups of warm broth in reserve and add it at the end.
  • Serve fideo with warm corn tortillas and a wedge of lime. I like to add whole pinto beans and cubed queso fresco.

Notes

If you do not prefer to use bouillon, you could use your favorite chicken base with 1-2 tablespoons of tomato paste. Ideally, the best fideo is with homemade chicken stock if possible. Most times I add vegetables to my fideo, but had several request to prepare a soupy fideo with no vegetables. This is how mom used to prepare it, simple.

    So similar to my mom’s recipe (she was from the Monterrey area), except she didn’t think fideo was enough of a carb and added cubed potatoes !!

    You always take me to my childhood with your recipes.. so happy I found your blog !

    I make this at least once a week just as as you have shown. I’m 81 and first ate this sooo many years ago at my friend Barbara’s house. Her Mama was born in the Balkans, moved to California as a young adult where I assume she learned this recipe. It was the most delicious comforting sublime amalgamation of simple ingredients I had ever eaten. Ok, bye. I have to go make some now. Love your blog.

    I’ve been wanting to make this soup for some time now and finally did today. I must tell you I looked at a number of recipes for this soup & chose yours and I’m so glad I did! Even though I’m of Italian descent, I absolutely adore these flavors! I’ll definitely be making this again😉
