What comes to mind when you think about the kinds of foods for lent? First things that comes to mind meatless, vegetables, legumes and seafood. Growing up, the dishes I remember were tortitas de camaron, tortitas de papa, nopalitos en salsa, lentejas, pan seared fish and sometimes just beans with eggs. To translate, there were dried shrimp cakes, potato cakes, cactus in salsa, fish and bean dishes. Nowadays foods for lent can be any meatless dish. Although the idea of the traditional recipes appeal to most of us, we sometimes opt for the quick and easy recipe on a Friday evening.
