Frozen cafe con leche paletas are a real treat on a hot summer day! That’s everyday lately or at least it seems. Not complaining though. Sooner than I like, it will be cold again and I will miss these warm days. As I sit here typing this blog post, I am remembering that I still have a few cafe con leche paletas in the freezer! Excuse me if I eat while I type, Lol! Ok, now I can continue typing! These paletas are 10 times better after being frozen for almost two weeks. Here is a really good tip for a glossy and firm paleta. Once they were frozen, I carefully removed them from the molds. I placed them on a wax paper lined plate and placed them back in the freezer. After a few hours, I transfered them to a large freezer bag and back into the freezer. They are just right! My husband Richard is the one that is crazy for coffee flavored ice cream. He has not tried one of these as of yet and he may just have to wait for the next batch. #foodieforlife #paletas #cafeconleche
This paleta of cafe con leche was inspired by my abuelita Sarita. I bet many of you can relate to the cafe con leche or mexican hot chocolate that your abuela would prepare for you with so much love. I remember the sparkle in her eyes as she prepared cafe con leche with the fresh cow’s milk gathered in that vintage blue enamel pot. Priceless memories.

Cafe con Leche Paletas
I love mexican-style paletas! I especially love paletas(popsicles) that remind me of my abuelita(grandmother). I have the most fond memories of my abuelita preparing cafe con leche for us with fresh cow's milk. It really was more milk than coffee, but it was special.

- 3/4 cup coarse ground coffee
- 2 cups water
- 2 inch piece mexican canela cinnamon stick
- 14 ounce can sweetened condensed milk
- 7 ounce can table cream or half n half cream
Instructions

- Add the water, coffee and cinnamon stick to a sauce pan. Bring to a boil. Remove from heat and let cool at room temperature.Using a coffee filter, paper towels or cheesecloth, strain the coffee mixture into a bowl. Discard coffee grounds and cinnamon.
- Whisk in the sweetened condensed milk and table cream(or hal n half). Pour into paleta molds and freeze overnight.
Notes
Tips~ each paleta mold held about 1/2 cup of the liquid mixture. I prepared 6 paletas and pour the remaining 1/2 cup in a small plastic bowl. Dixie cups with popsicle sticks would work as well.
