Love in the shape of a tortilla! This is the perfect way to describe all the love and dedication put forth by my parents as I was growing up. We grew up poor, but rich in so many ways. There was always food on the table. This is where learned to appreciate the simple dishes like fideo, migas con huevo and queso en salsa. Both corn tortillas and flour tortillas were part of every savory Mexican dish mom prepared. She and my dad both expressed their love through the dishes they prepared and shared with my siblings and me.
