Pineapple agua fresca! Yes! Why did it take me so long to give it the spotlight it deserves on La Piña en La Cocina. Lol! Actually one of my first professional food blogging jobs was for Que Rica Vida(general mills) and guess what the recipe was? You got it, coconut pineapple agua fresca. Seems like so long ago. I have learned so much since then, but I am still learning and still enjoying every minute working from home. What better to prepare during the summer when there is plenty of fresh and fruity agua fresca? Paletas! Popsicles! Just in case you are new to my blog, my blog name came from the nickname my Dad gave me as a baby, piñita or little pineapple.
Turn your agua fresca into an instant sangria by adding 1 bottle(4 cups) of white wine, such as pinot grigio, extra lime juice 1/2 cup grenadine, sparkling water(about 3 cups) and more fresh fruit like sliced oranges, peaches and grapes!
Pineapple Agua Fresca-Pineapple Paletas
You know how I feel about pineapple, and I can't believe it took me this long to post this agua fresca and paleta recipe! Everything fresh and perfect for summer!
- 1 large fresh pineapple
- 4 cups cold water
- Juice of 1 large lime
- Sugar to taste
- You will also need
- 8-10 fresh strawberries sliced in half
- 2 cups melon sliced in 1/2 inch cubes
- Paleta molds for 6-8 4 oz paletas
- Slice the fresh pineapple in 1/2 inch cubes. Add 3/4 of pineapple to the blender along with 4 cups of cold water, juice of 1 lime and sugar to taste. Blend on high for 45 seconds to 1 minute. Strain through a fine wire strainer into a pitcher. Chill for a few hours.
- Take the remaining fruit, including strawberries and melon and lay them out onto a sheet pan lined with wax paper. Freeze for a few hours.
- When ready to serve, add frozen fruit to pineapple agua fresca and serve in chilled glasses.
- For Paletas: Pour prepared agua fresca into molds 2/3 full. Add a few pieces of your mixed fresh fruits until molds are completely filled. Freeze overnight. To release paletas from mold, run under lukewarm water for 3-40 seconds.
A basic fruit based agua is very easy to prepare. The key is to use fresh, ripe fruit that is season. And if the fruit you choose needs a little perk, add some fresh citrus, like orange or lime juice. Adding frozen fresh fruits is a treat! Good quality flavored extracts are a good way to add extra flavors. Coconut and vanilla extract would be really tasty combined with this pineapple agua fresca as well as with the paleta.
Every week I purchase a fresh pineapple. Most times we just enjoy it fresh as a snack.
Frozen fresh fruit for ice cubes! Yes!
These were tall glasses, but if I were serving for friends, I would use smaller glasses no bigger than 10 ounces.
And if you have any left, paletas! If you don’t have paleta molds, a simple dixie cup with popsicle sticks from the craft store will work as well.
Look for paleta molds that fit 4 ounces of liquid.
And you know I can’t resist some chile limon seasoning on my pineapple paleta!! Use your favorite brand and generously sprinkle paleta after removing them from the mold.
