2 1/2poundsYukon gold potatoespeeled and sliced into 1-inch pieces
3-4tablespoonsunsalted butter
1/2cupmilk or cream
1/3cupgrated parmesan or cotija cheese
1cupmuenster or chihuahua cheesegrated
Salt and white pepper to taste
Instructions
Add the potatoes to a pot, cover with water and bring to a boil. reduce heat and cook until fork tender.
Drain the potatoes, add butter and cream and whip with mixer or mash with potato masher. Mix in all of the remaining ingredients, stir well to combine, taste for salt.
