Poached cauliflower and broccoli work great with the egg batter. As long as you slice them so they are flat and can be flipped over easily. If you are deep frying, then that won't be an issue, lol! I think next time that I prepare these I will use only the fatter end of the squash. This way I can add more cheese and maybe slice them a little thinner. Cube up the extra squash and cook it in the caldillo along with any extra queso panela that is cubed.
