Green Chile Corn Tamal

Savory green chile and cheese made with fresh corn tamal!

Equipment

  • 12 Quart Steamer Pot

Ingredients

  • 5 large ears of corn about 4 full cups
  • 8 tablespoons unsalted butter or natural rendered pork manteca(lard)
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons of chicken bouillon granules or just use salt to taste
  • Salt to taste
  • 3/4 to 1 cup masa harina
  • 4 large roasted green chiles anaheim, new mexico or poblanos, diced
  • 6 ounces shredded cheese, Oaxaca, chihuahua or pepper jack
  • 24 Corn husk for tamales, plus extra for steaming softened in hot water
  • Deli paper or foil paper optional (for wrapping tamales)

Instructions

  • For the savory version, you will not add any sugar. After you process the corn as directed, add in the ingredients as listed and pulse to process until well incorporated. Taste for salt.
  • Follow instructions for filling and steaming. Garnish with your favorite salsa, crema or crumbled Mexican cheese.
  • If you prefer, you can add cheese and roasted green chile strips to the center of the tamal instead of mixing into the masa. You will need more cheese!
