Ingredients
5large ears of cornabout 4 full cups
8tablespoonsunsalted butter or natural rendered pork manteca(lard)
1 1/2teaspoonsbaking powder
2teaspoonsof chicken bouillon granulesor just use salt to taste
Salt to taste
3/4 to 1cupmasa harina
4large roasted green chilesanaheim, new mexico or poblanos, diced
6ouncesshredded cheese, Oaxaca, chihuahua or pepper jack
24Corn husk for tamales, plus extra for steamingsoftened in hot water
Deli paper or foil paperoptional (for wrapping tamales)
Instructions
For the savory version, you will not add any sugar. After you process the corn as directed, add in the ingredients as listed and pulse to process until well incorporated. Taste for salt.
Follow instructions for filling and steaming. Garnish with your favorite salsa, crema or crumbled Mexican cheese.
If you prefer, you can add cheese and roasted green chile strips to the center of the tamal instead of mixing into the masa. You will need more cheese!
