Spicy Shrimp Packets

This recipe for spicy shrimp packets is adapted from one of the oldest recipes on my blog. It was time to revisit it and give it a fresh kicked up look!

Equipment

  • Foil or parchment paper
  • Baking sheet

Ingredients

  • 4-6 spring onions
  • 2 Jalapeños
  • 2 cups fresh corn
  • 4-6 cloves of garlic
  • 2 tsps paprika
  • 1 tsp fresh cracked pepper
  • 1 tsp red pepper flakes
  • 1 tsp oregano
  • 1 stick butter
  • Juice of 2 limes
  • Salt to taste
  • 1/4 c olive oil
  • 1/3 c cilantro
  • 1 lb large shrimp peeled and deveined
  • Tajin chile limon, to taste

Instructions

  • Combine all of the ingredients listed, minus the Tajin. Cover and chill for one hour.
  • When ready, preheat oven to 400 degrees F.
  • Divide mix into two double lined foil packets. Sprinkle with Tajin over the top of ingredients. Seal shut.
  • Bake packets on sheet pan or in a shallow baking dish for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Open packets on individual plates. Stir gently. Serve over pasta, rice or with tostadas and avocado!

Notes

If you prefer not to use foil paper, you can use parchment paper. Look for the more flexible brown parchment paper because it's much easier to work with.
