Nopalitos

This recipe for nopalitos was inspired by the cookbook La Cocina Familiar En El Estado De Nuevo Léon.  Although I have prepared this recipe many times in the past years, I simply knew it as ensalada de nopalitos. In the cookbook it has the title of nopalitos el regio. Regio referring to the people of the northern states of Mexico, Nuevo Léon, in particular.

Ingredients

  • 4 cups nopales previously cooked and diced
  • 2-4 Chile serrano minced
  • 1 cup Onion diced
  • 3 roma Tomato diced
  • 2-3 tbs Cilantro chopped
  • Juice of 1 Lime
  • Salt to taste
  • Pepper to taste
  • 3 tbs olive or grapeseed Oil
  • 1/2 cup Queso Fresco crumbled

Directions

  • In a bowl combine all of the ingredients, minus the cheese. Stir well to combine and taste for salt. Transfer to a serving dish. Garnish with crumbled queso fresco. Serve right away. 

Notes

This recipe can be prepared ahead of time. I would not add the cheese until right before you serve. It can be enjoyed as a salad, meatless taco filling, tostada topping or as a salsa garnish for your favorite tacos!
