Melon Cucumber Agua Fresca

Refreshing cantaloupe melon, cucumber and a surprise ingredient! Can't wait to prepare this again and again this summer!

Ingredients

  • 1 large cantaloupe melon
  • 2 large cucumbers
  • 2 medium carrots
  • Juice of 3 limes
  • 2 cups cold water more if you prefer to thin out the agua fresca
  • agave or simple syrup, to taste
  • 12-15 oz bottle of topo chico carbonated mineral water or any unflavored seltzer
  • any other fruits, plums, peaches, cherries sliced small
  • Ice

Instructions

  • Peel and slice half of the melon, 1 large deseeded cucumber and 2 peeled carrots. Transfer to the blender. Pour in 2 cups of cold water, juice of 3 limes and agave syrup, to taste. Blend on high until very smooth. Transfer to a large pitcher and chill for a few hours. I use a power blender, so this will yield a thicker agua fresca. You can strain it using some cheesecloth. Or you can pulse to blend and then strain using a wire mesh strainer. if the pulp doesn't bother you, than leave it as is.
  • Peel, slice and dice the remaining melon and deseeded cucumber. If you are adding plums or other fruit, slice into small bite size pieces. Combine the fruit in a bowl, cover and chill.
  • When ready to serve, pour in the mineral or sparkling water to the agua fresca. There is plenty of pulp in the cantaloupe, so if you want to thin it out a little more, add more mineral or sparkling water. Stir well.
  • Fill glasses halfway with ice. Pour in agua fresca. Garnish with fruit and cucumber mix on top. I like to serve the extra fruit on the side with lime wedges and chile lime seasoning.

Notes

Adding the carrots is genius! It adds color and a hint of sweetness, but no real carrot flavor if that's what you are afraid of. I love carrot juice though! This recipe yields a slightly thicker agua fresca. You can strain it using a wire mesh strainer. I used a power blender so it really blend it fine. You would have to use cheese cloth or a coffee filter in this case.
