Mexican Steak And Eggs-Huevos Divorciados

Serving both red and green salsa side by side on top of huevos rancheros is referred to as divorced! Lol! Divorced eggs with thin sliced arrachera(skirt steak).

Ingredients

  • Avocado or olive oil
  • 1/2 lb extra thin skirt steak or top round 4 pieces
  • Salt and pepper to taste
  • 1 med white onion sliced into thin strips
  • 1 large jalapeño or 2 serrano peppers sliced thin
  • 12 oz Sam's Fresh Salsa Verde
  • 12 oz Sams' Fresh Cantina-Style Salsa
  • 4 corn tortillas
  • 4 large eggs
  • cilantro chopped fine

Instructions

  • This recipe will require you to multi task! Preheat a large skillet to medium/high heat. Season the skirt steak lightly with salt and pepper on both sides. Once hot, drizzle in a little oil. Add the steaks. Sear steaks for 2-3 minutes per side. Remove steaks and reserve covered.
  • On another burner at medium heat, place the large skillet. Add 1/4 cup of oil. After a few minutes, place the four corn tortillas on oil. The tortillas will cook for 8-10 minutes, turning as needed until they get crispy. Once crispy, carefully crack one egg over each tortilla. Season with salt and pepper. Cover and turn heat to low.
  • At the point where you are crisping up the tortillas, heat to smaller skillets to medium heat. To each skillet drizzle in some oil. After one minute, to each one add half of onion and jalapeños. Season lightly with salt and pepper and saute for 3 minutes.
  • To one skillet pour in all of the Salsa Verde. To the other skillet with onions and jalapeño pour in all of the Cantina Style Salsa. Stir well to combine. If the salsa seems too thick, pour in a little chicken broth or water. Taste for salt as it cook for the next 7-8 minutes.
  • Once the eggs are set to your liking, I like my eggs yolks a little runny, then you can build your plate! Quickly warm the steaks by placing them on one side of eggs in skillet. When ready, add two tortillas with eggs on the plate. Place 2 pieces of thin arrachera in between the eggs. To one eggs spoon on a generous amount of Sam's Salsa Verde. To the other egg spoon on Sam's Cantina Style Salsa.
  • Add some refried beans with shredded cheese and Mexican rice to each plate. This meal can be enjoyed any time of the day, but it's especially popular for brunch!

Notes

Adding sauteed onions and chile pepper to any blended salsa adds another level of flavor!
