Ingredients
3mangopeeled and sliced
1/2of a freshlarge pineapple, sliced
1jicamapeeled and sliced
*you want equal amounts od eachabout 3 cups each
1large orange or red bell peppersliced into thin ribbons or strips
1red fresno or green jalapeno chile pepperminced fine
1/3cupcilantrochopped fine
Juice of 6-8 key limesabout 1/3 cup
1/3cupgrapeseed oil
2 to 3tablespoonsof agave nectar
2tablespoonsof Tajinchile limon powder
Salt to taste
Instructions
Toss the fruit, jicama and peppers together in a large bowl. Whisk together the lime juice, oil, agave, chile limon and salt to taste. Pour over fruit, add cilantro and stir well to combine. Taste for salt and chile limon powder. Cover and chill until ready to serve.
Notes
Don't limit yourself to just lime and chile limon seasoning when it comes to fresh fruit. Savory dressings with some seeds, cranberries and hard salty cheese pairs well with most of these fruits.
