Ingredients
2 1/2cupsshredded chicken breastpreviously cooked
1cupred onionthin sliced
2large roma tomatoesdiced
1cupnopalitossliced or diced, optional
1large carrotshredded
2large chipotles in adobominced
cilantroto taste
1/3cupred wine vinegar
1/3cupgrapeseed or olive oil
juice of 2 limes
salt and fresh cracked pepper to taste
Instructions
In a large bowl, mix all of the ingredients in the order listed. Taste for salt, vinegar and oil. Cover and let sit for 30 minutes before serving. Serve with chopped lettuce, tostadas, your favorite salsa and lime.
