Carne Guisada Con Chayotes en Salsa de Habanero- Stewed Beef with Squash in Habanero Salsa
Stewed milanesa thin beef in a spicy habanero salsa prepared with yellow tomatoes

Ingredients
2poundsbeef milanesa (top round)steaksliced into bite size pieces
1tspkosher salt
1tspfresh cracked pepper
1tspgarlic powder
3tbspsAvocado oil
1cuponiondiced
3clovesgarlicminced
1large chayote squashdiced
1medium green bell pepperdiced
1 1/2- 2cupsyellow tomato salsa, see recipe
Instructions
Season the sliced beef milanesa with salt, pepper and garlic powder, to taste.
Preheat 3 tablespoons of oil to medium heat for 5 minutes. Add the beef. Cook and brown, tossing as needed, for 10 minutes.
Add in the onions, garlic and chayote. Saute for another 6-7 minutes.
Add in the yellow tomato salsa. Stir well to combine and reduce heat to a simmer. Continue cooking for 15minutes. Serve with rice, beans and warm tortillas.
Notes
In the photos of the guisado, I added 1 sliced serrano, but that is optional
