Yellow Tomato Habanero Salsa (Salsa de Tomate Amarillo Con Habanero)
A bright yellow smooth habanero salsa prepared with farmers market yellow tomatoes and fruity and spicy habanero!

Ingredients
3large yellow tomatoes, 1 1/2 lbsquartered
3yellow habanero peppersstems removed
1/3medium white onion
4clovesgarlic
Pinchof Mexican oregano
Salt and pepper to taste
3tbspAvocado oil
Instructions
To a saucepan, add the tomatoes, habanero, onion and garlic. Cover with water and bring to a boil. Reduce heat and cook for 10 minutes.
Using a slotted spoon, transfer the ingredients to the blender. Season with oregano, salt and pepper. Blend on high until very smooth. Set aside.
Preheat 3 tablespoons of oil to medium heat for 4 minutes. Pour in the salsa. Reduce heat and continue cooking for 10 minutes. Taste for salt. Cool completely before storing in an airtight container.
