6large tomatillospeeled, washed and roughly chopped
2-4serrano peppers or 1-2 jalapeños, roughly chopped
handful of freshly washed cilantro
Juice of half a large lime
Salt to taste
1/3cupwhite oniondiced
1clove of garlicminced
Splash of wateroptional
Instructions
To the blender, add tomatillos, serrano peppers, lime juice, cilantro and salt to taste. Pulse blender until you have a coarse looking salsa. Or if you prefer, blend smoother.
Pour into serving dish. Taste for salt. Mix in a splash of cool water if salsa is too thick. Mix in diced onion and minced garlic.
Salsa is best if enjoyed within 2 days, 3 days tops. Keep covered tightly in refrigerator.

You can create this same salsa using roughly chopped roma tomatoes too!
