Pickled Red Onions- Curtido

The easiest pickled red onion recipe ever! Good for everyone of your favorite tacos!

Ingredients

  • 1 large red onion sliced thin
  • 1 habanero, serrano or jalapeno, thinly sliced
  • 1 tsp crushed Mexican oregano
  • Juice of 1 large lime
  • 1/3 cup white vinegar
  • Salt to taste

Instructions

  • Combine all of the ingredients in the order listed. Toss well to combine. Cover and let sit for 1 hour, stirring now and then.
  • Transfer to glass jars and chill until ready to serve.

Notes

To this pickled red onion recipe , you can add beets, grilled or charred chile peppers, thin sliced cucumber, jicama, and more. Avoid adding uncooked whole peppers unless they have a thin layer of flesh, like these yellow chile guero.
