I celebrate Hispanic Heritage month by preparing simple dishes like this recipe for green chile beef and potato. Recipes, like this guisado, are passed down from generation to generation. The most memorable dishes are ones prepared with minimal ingredients. They are tried and true recipes that we prepare over and over again. Because of my passion for the family recipes, I have become a mentor in my family. The results are dishes prepared with lots of love. Recipes that are passed down to the next generation. For today’s traditional guisado of carne con papa y chile verde, I am using beef hind shank . This traditional cut of beef is also used to prepare my favorite soup, caldo de res .

Green Chile Beef and Potatoes

During Hispanic Heritage Month, I enjoy preparing dishes learned from Mom. This simple guisado (stew) of green chile beef and potatoes prepared with beef hind shank, is just one of the many recipes my family enjoys. To keep the the traditions going become a mentor to the younger generation in your family. Teach them the family recipes that have been shared over and over with lots of love.

Ingredients

  • 6 tablespoons of grapeseed or olive oil
  • 1 ½ pounds-2 pounds Rumba Meats Beef Cross Cut Hind Shank sliced
  • 1 tsp. kosher salt
  • 1 tsp. fresh cracked pepper
  • 1 tsp. granulated garlic
  • 1 tsp. cumin
  • 1 cup white onion diced
  • 3 large cloves of garlic minced
  • 6 previously roasted green Anaheim chile peppers diced (2 cups)
  • 2 cups tomatillo salsa homemade or store bought
  • ¾ cup beef broth or water
  • ½ tsp Mexican oregano crushed
  • 1 pound russet potatoes washed and diced

Instructions

  • At medium heat, preheat 3 tablespoons of oil in a large skillet for a few minutes. Add the beef. Season with salt, pepper,garlic and cumin. Stir well to combine and continue cooking until beef is nicely browned, about 15 minutes.
  • Mix in the onion and garlic. Saute for another 4 minutes. Mix in all of the roasted green chile, tomatillo salsa and broth. Stir well to combine. Add in ½ teaspoon of crushed Mexican oregano. When it comes up to a boil, taste for seasonings and adjust to your liking.
  • Reduce the heat to a low simmer and cover.
  • While the beef simmers, heat the remaining oil at medium heat in a separate skillet. Add all the potatoes and spread out evenly.
  • Cover skillet with a lid. Continue cooking the potatoes for 20 minutes, stirring as needed. Transfer potatoes to the skillet with beef. Stir well to combine and simmer for another 10 minutes or until beef is tender and potatoes are coked all the way through.

    Hi Sonia, I want to make this, but I have a question. After step 3, how long should I simmer the meat to make sure its tender?? Thanks, looking forward to trying this.

      Hi John, the cooking time really depends on your heat source, pot, things like that. I typically like to cook at below medium at a steady simmer until I can pull the meat apart easily with a fork. It may take a few hours. If you have a pressure cooker, you could cook the beef under pressure for 40 minutes and it will be fall apart tender.
