Sweet Heat Garlic Sticky Wings

No superbowl parties for us this year, but that does not mean I did not prepare some superbowl inspired foods! I am often asked “What do you do with all that food that you prepare?” Well, most times I will freeze the food into smaller portions to use for quick meals. And other times, when I prepare sauce, salsa’s or hot sauce, I incorporate them into new recipes. This is exactly what I did with this tasty chicken wing recipe.  This is truly how I cook on a regular basis. I try my best to use the ingredients I have on hand and save myself a little money by avoiding an extra trip to the grocery store. The three recipes featured in this recipe are versatile and can be added to many recipes, such as stews, chili, soup, salad dressing, enchilada sauce, just to name a few. Or you can go to your local grocery store and purchase your favorite pepper jelly,  favorite chile sauce and  favorite hot sauce and still dish out some kick ass wings, no doubt! I encourage you to make a recipe your own to suit your taste. After all that half the fun of cooking in your own kitchen. Plus you get to enjoy a great meal with your friends and loved ones.

Sweet Heat Garlic Sticky Wings~

Ingredients

3 pounds wing sections, defrosted
salt
pepper
garlic
smoked paprika
chile de arbol powder
vinegar powder (if you can’t find the vinegar powder, used mustard powder)

You will also need
Grapeseed or canola oil
1/2 cup store bought garlic flavored wing sauce
1/2 cup spicy pepper jelly (I used my homemade recipe)
1/2 cup New Mexico chile sauce (homemade recipe)
2 to 3 tablespoons habanero-fresno hot sauce (homemade recipe)
2  to 3 tablespoons unsalted butter

*2  to 3 tablespoons of honey, optional

The wings, sizzling after 45 minutes in a 500 degree oven. I was perfectly happy and ready to eat them like this! Lol!

Directions

1. Line a large baking sheet with foil paper. Drizzle with oil evenly, set aside. Mix 1 teaspoon of each of the spices listed above in a small bowl Stir well to combine and season the wings generously and place on prepared baking sheet. Place rack in oven 1/3 of the way down. Preheat oven to 500 degrees F.

2. When oven comes up to temperature, place wings in oven and cook for 20 minutes. Turn wings over and cook for another 20 to 25 minutes. While the wings are baking, place all of the ingredients for the sauce in a small pot and heat to medium/low heat just until butter melts.

3. Once wings are cooked, remove from oven and lower temperature to 400 degrees F. Baste the tops of wings with sauce, place back in oven for 5 minutes. Turn wings over, baste again and back in oven for another 5 minutes. Finally, turn wings skin side up and baste one last time and turn broiler to high heat. Broil for just a minute or two. Remove from oven and toss with any remaining sauce. Serve right away. Yields 4 servings.

QUESO BLANCO

3 tablespoons unsalted butter
3 tablespoons all purpose flour
3 1/2 cups whole milk
2 cups monterey pepper jack
1 cup asadero or chihuahua cheese, shredded
Pinch of cumin
Salt and fresh cracked pepper

Heat the butter to medium heat in a sauce pan, add the flour and whisk together. Cook for a few minutes, add the cumin, salt and pepper. Add the milk and cook until it almost comes to a boil(don’t let it boil). Add the cheese, stir well to combine….done!

Variation: you can use a mix of cheeses if you’d like, use olive oil, instead of butter…add a little chicken broth to thin out the sauce….add roasted green chiles to the sauce.

HOMEMADE CHILI SAUCE RECIPE FOLLOWS PICTURE

For chili dogs, chili cheese fries or nachos, this is a tasty homemade recipe.

BEEF CHILI SAUCE

3 tablespoons olive oil
1/2 cup onion, diced
2 cloves garlic, minced
1 jalapeno, minced
2 tablespoons flour
2 cups chicken or beef broth
14 oz can diced tomato w/ green chiles
8 oz can jalapeno “El Pato” brand tomato sauce or use regular tomato sauce w/ 2 tablespoons hot sauce
2 tablespoons worcestershire sauce
2 tablespoons chili powder
1 tablespoon cider vinegar
1 teaspoon smoked parika
1 teaspoon granulated garlic
1 teaspoon onion powder
1/2 teaspoon oregano
1/2 teaspoon pepper
salt to taste
1/2 pound ground chuck (You could use 1 pound if you like, but I wanted it to be more of a chili sauce with just some beef)

Directions

1. In a large skillet, heat oil to medium heat. Add the onions, garlic and jalapeno. Saute for 6 to 8 minutes.
Add in the flour and cook for another minute.

2. Add all ingredients in the order listed, minus the beef. Bring to a boil, reduce heat and taste for salt. Add in the beef and break into smaller pieces using a flat edge wooden spoon. As is cooks down break the beef down until it looks like fine crumbles. Simmer for 20 to 25 minutes or until the sauce reduces and thickens slightly. Yields 6 servings. Flavor will improve overnight, so I would suggest preparing a day or two ahead. Great for chili dogs, nachos, chili cheese fries!

For Chile Infused Chips, Brush one side of corn tortillas with chile oil. Cut into thirds or quarters, sprinkle with salt and bake for about 16 to 20 minutes at 395 degrees F., turning halfway through baking time. Sprinkle with chile limon powder as soon as they come out of the oven.

And finally for my last pick, I want to end on a sweet note. Because after all that spicy, savory and zesty food, I always crave a sweet ending. My favorite cookie recipe spiked with a little espresso and cinnamon.

ESPRESSO CHOCOLATE CHIP COOKIES

1 1/4 cups all purpose flour
1 cup whole wheat flour
2 teaspoons instant espresso
1 teaspoon ground cinnamon
1 teaspoon baking soda
3/4 teaspoon salt
1 cup unsalted butter, softened
3/4 cup sugar
3/4 cup dark brown sugar
2 eggs
2 teaspoons vanilla extract
10 oz. bag Ghirardelli bittersweet chips (60% Cacao)

Directions

1. Preheat oven to 375 degrees F. Line two baking sheets with parchment paper, set aside.

2. Combine the flour (both varieties), espresso, cinnamon, baking soda and salt in a bowl and set aside.

3. Cream together the butter with both brown and granulated sugar until creamy. Mix in one egg at a time and vanilla.

4. Add the dry ingredients into the wet until well incorporated. Fold in the chocolate chips. Drop by spoonfuls or cookie scoop 24 large cookie dough balls onto lined baking sheets. Flatten slightly and bake for 12 to 14 minutes, rotating pans halfway through baking time. You want the edges to just turn a light golden brown. Remove from oven and let cool before removing from pan. Yields 24 large cookies.

 

Spicy Drummettes Two Ways~ Saucy and Crispy

Is the time for wings, dips, poppers and chips! I am a lover of chicken wings, but try to only indulge twice a year. It makes the experience all that much more enjoyable and tasty! And of course, how could I not prepare them at home? Many times we don’t have a choice, but to purchase that 5 pound bag of frozen wings or drummettes. So to make it worth my while I like to prepare two flavors for us to enjoy.

Ingredients

For Spice Rub
1/4 cup chile ancho powder or mild chili powder
2  teaspoons kosher salt
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons smoked paprika
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon pepper
1/2 teaspoon chipotle powder

 
For Saucy Asian Sauce
1/3 cup hoisin sauce
1/4 cup rice wine vinegar
1/4 cup hot sauce (I used Sriracha)
1 teaspoon toasted sesame oil

1 teaspoon ground ginger

For Crispy Drummettes
2 eggs
4 to 5 tablespoons of your favorite hot sauce (I used Tapatio)
2/3 cup all purpose flour
2/3 cup panko bread crumbs
2 teaspoons dried cilantro, or 4 tablespoons fresh, finely chopped
Fresh cracked pepper, to taste

Saucy and Crispy Wings

Directions

1. Preheat oven to 375 degrees F. Line two baking sheets with foil paper or parchment paper, set aside.

2. For the Asian, season 12 drummettes with half of dry rub. Transfer to lined baking sheet, drizzle with olive oil, set aside. In a bowl, whisk together the Hoisin sauce,  rice wine vinegar, sriracha, sesame oil and  ginger.  Set aside.

3. Season the other 12 drummettes lightly with spice rub, set aside. In a bowl, beat together the eggs and hot sauce. In another bowl, add the flour, panko, cilantro and fresh cracked pepper.

4. Dip the (mexican) drummettes in the egg mixture, then dredge in flour/panko mixture. Transfer to second baking sheet. Drizzle with olive oil. Bake all the drummettes for 30 to 35 minutes, remove from oven, turn chicken over and bake for another 20 minutes. Remove chicken from oven and turn broiler to high.

5. For the Asian flavor , brush chicken with half of the Hoisin sauce mixture and broil for 3 minutes. Turn over, brush with remaining sauce and broil for another 3 minutes. Remove from oven. Broil the Crispy drummettes for a few minutes to crisp up the coating. Let rest for 3 minutes, yields 2 dozen . Serve with extra chile garlic sauce, hot sauce and blue cheese dressing.
