Some family traditions stay with you your whole life. Traditions like piñatas for  your birthday are so special. Traditional family recipes prepared for special occasions, we later speak of with great fondness. The simple, everyday recipes that were prepared time and time again for family meals. Those are the family traditions that you don’t even realize are so special until they a far off memory. The tradition of menudo  or barbacoa on Sunday’s, those are the days I long for when I think of home.   Caldo de res, that was slow cooked for hours and enjoyed on a chilly evening  in the biggest bowl available. It makes me giggle evertime I think of it! Or the first time your fiance, who was unfamiliar with traditional Mexican food, meets your Mom and she serves him tacos de lengua! Lol! Just for the record, he loved them and still does. Just a few short years ago, the only way I could enjoy those traditional Mexican dishes was when I visited home. My parents were no longer here to teach me and the thought of being able to prepare these dishes was just a wishful dream. One day, 2 years ago, I was contacted by Rumba Meats. They offered me everything I was wishing for! Barbacoa de cachete, menudo, lengua de res and beef hind shanks for caldo! When they informed me that I would be able to purchase all these quality meat products at my local Walmart, I couldn’t get there fast enough. Since that day, I have prepared so many wonderful dishes that always transport me right home. I could never express the joy they have brought me with every barbacoa taco and every bowl of menudo. On today’s blog post I want to share with you the delicious recipes I have prepared with Rumba Meats. On a funny side note, I have to make a comment about the video. I saw myself on the interview portion of the video and I died laughing! Lol! The look on my face was as if I was being interrogated by the FBI! I was tired, hot, couldn’t sit comfortabley because I am short. And my face! Lol! I have to laugh about it, because my first instinct was to be very critical of myself.  Regardless of how I saw myself, I would not change one thing about it! The crew was awesome and they did everything to make us feel comfortable.  The point of all this is that this whole cooking journey has helped me become a more confident person. I love to share with you all. All of your wonderful comments, emails and words of encouragement have helped me so much.
