Preparing paletas or popsicles at home started way back with that metal ice tray from Mom’s kitchen. Some homemade limonada(lemonade) and a couple of crooked toothpicks and we were the happiests kids on our street! I have prepared a few simple paleta recipes over the years, but as always, it seems I am forever fighting for space in my freezer. For today’s blog post, I am sharing a fairly easy paleta recipe with you. Nuez con Coco(pecan with coconut). The pecan and coconut flavored paletas remind me alot of my Dad. Those were some special times when Dad would surprise us and bring home paletas when we lived in Houston. There is a place, La Brisa Ice Cream, on Canal St. that specializes in delicious Mexican paletas of all flavors. Paletas de Nuez Con Coco

 

  Paletas de Nuez con Coco

2 cups whole milk
14 ounce can sweetened condensed milk
1 1/2 teaspoons vanilla bean paste
1/2 teaspoon fresh ground Mexican cinnamon
pinch of salt
1 1/2 cups pecan halves
1 full cup sweetened flaked coconut

You will also need
popsicle sticks
paleta molds

Notes: For a more coconut flavor, I may try mixing in a can of cream of coconut next time. A little rum…hmmmm.

Directions

  1. Combine all of the ingredients  into the blender. Blend on high until there are no more large chunks. I found it easier to pour some of the mixture into a smaller pitcher. The solids will want to settle to the bottom, so I suggest stirring the mixture often while you are pouring the molds.

2. Before you pour, you can add some pecan and coconut into the mold before. I also like to add some after I fill the molds. Freeze for 30 minutes before inserting the sticks. Best if frozen at least 24 hours before enjoying. Yields up to 10 paletas.

I realy enjoy using the vanilla bean paste whenever I prepare ice cream or milk based paletas.

The solids will want to settle to the bottom. Make sure you stir now and then while pouring your molds.

This paleta mold was not very big and holds less than 1/2 cup of liquid.
